So far it’s dropped a good 6 inches of snow in my sweet mountain hometown. I’m being honest with a little homesickness tucked away in my adult self. I know if I was hanging out at my momma’s today she would have a big pot of this soup on the stove. She kind of won my hubby over with it the first time he came over after a late baseball practice and the more he brags on her food the more she cooks. We all win!! Ha!
No snow here but its cold and rainy, and as you can see I haven’t traveled out of my slippers. It was a struggle getting back into the routine this week so I am totally ok with being productive but not leaving the house or my slippers!! Haha! The washer and dryer are on repeat, kids are fighting, the dishwasher is already full, and I’m writing this under a heated blanket! 😀 Total normalness over here today!
So I really needed something warm and filling, salads are fun in summer and needed in the winter but sometimes we need a break from the mundane!! My hubby loves this soup, kids are all about a grilled cheese, and I needed a piece of home today. So my momma’s homemade soup it is!!
First I’m gonna show you how I put a healthy spin on it and made my serving. My goal is never cook two meals but until I convince my kids the benefits of veggies momma needs her own version of things. My body can’t metabolize a grilled cheese like theirs even if it is on whole wheat bread!
Here is what you will need:
bag of frozen cauliflower rice
seasoning of choice
1 pound of ground beef
1 jar of tomato sauce
1 can beef consume soup
I can mild rotel tomatoes
2 cups frozen vegetables
1.5 cups of frozen hash browns
I started here:
I put the whole bag of cauliflower rice in a small pot on low heat. Salted it and seasoned it with this everyday seasoning from Trader Joe’s and a couple of sprays of coconut oil spray.
While this steamed I grounded up the beef, just one pound will do! I forgot to dice up the onion but the recipe calls for it! Oops! Costco’s ground beef is my fav but you can grab any you choose at the store!
Add 2 cups of frozen mixed vegetables, a jar of spaghetti sauce, and a can of mild rotel tomatoes.
After I had finished this my cauli rice was finished steaming. I scooped out a cooking spoon full of the soup (before adding the other ingredients) and put it in with the cauliflower rice, stirred it, placed lid back on to keep it warm, and moved it off the heat.
Next I added the remaining ingredients to the soup to complete my momma’s recipe.
1 can of beef consume soup
1/4 cup sugar
1.5 cups of frozen hash browns.
and turned up the heat to get it soupy!!
Kids ate grilled cheese with applesauce! Momma kept it clean and trimming, and Ronman was a happy hubby!! Woohoo!
I’m so thankful for a momma who taught me to cook, I hope to pass that same rhythm to my sweet girls!
Don’t forget that I had to use my self-discipline muscle to pass up those buttery grilled cheese. I have no super power other than the strength found in Jesus Christ. Success is ours if we stay focused.

There was lots of leftover soup so Ronnie has lunch for Monday and Tuesday while I’m at work and can’t pack his lunch! I think he’s spoiled if I do say so myself!! Hope you enjoy the recipe!!
