Oh my gosh y’all!! You have to try this! I felt like I was at Chipotle! And I gave my hubby the cauli rice with the beans, I just knew he was going to complain! He does not like it when I trade in veggies for his favorite food. He was raised southern and loves rice!! But he raved about it!
My kids didn’t eat the “rice and beans” but it was just more for us 😛 , they were happy with their mac and cheese!
I went live on my LIKE page today and showed y’all what I had up my sleeve for dinner tonight. Ronnie was home earlier than usual since it’s exam week at the high school, so I threw the chicken at him when he got home. “Hey babe, how was your day? Great! Put this on the grill!” True love. 😉
It was a normal Tuesday(totally felt like Monday) around this place filled with piles of laundry and spelling words:
I am trying to make the normal not feel so mundane. Each moment is a gift if I just remember to receive it. I procrastinated the laundry all day but finally got it folded right before Ronnie got home! Phew! HA!!
Back to the meal part of the post!!
So we started with organic chicken breasts, marinated in this yumminess.
Follow the directions on the back of the marinade and cover your chicken in it. I marinated mine this morning and put it back in the refrigerator until time to start cooking supper. You could totally prepare it the night before!
When it was time for supper I put the cauliflower rice in a pot and seasoned it while it heated. I add coconut oil spray just to keep it from sticking to the pot while it heats. I also heated black beans and a can of rotel in a separate pot. When it was all ready a scoop of beans on the cauliflower rice. So delicious!
I also heated up some green beans and made the kids their favorite Annie’s mac and cheese!! My kids love green beans and Parker Jane always eats hers because we told her that green beans makes her hair grow! Since her life goal is to be Rapunzel there is no asking her twice!! 😀
Everyone ate tonight and that don’t always happen! I hope this helps you and your family have a healthy meal together! It was ready in 30 minutes!!
