Oh my!!! Thank you for wonderful friends at work who share their recipes!! I worked Monday and my friend told me that she had taken Jessica Alba’s turkey meatball recipe and tweaked it to make it whole 30 style!! I knew I had to try it! So pinterest to the rescue! I looked up the recipe for her meatballs on pinterest and I tweaked it to make it a whole 30 meal! Oh and have you tried zoodles?! Yum!
I actually purchased myself this kitchen utensil. A vegetti pro!! Totally affordable and a must for your healthy kitchen!
Here is what you will need:
Zucchini 2-3 per adult serving
1-2 pounds of ground turkey
seasoning of choice (I use everyday seasoning from Trader Joe’s and Himalayan salt)
2-3 eggs depending on amount of turkey. Use more eggs for increased binding of the meatballs.
1/4- 1/2 shredded carrots
1 onion chopped
First I zoodled with the help of my big girl!
Then I mixed the turkey, eggs, seasonings, and veggies
Mash it up all together with your hands and roll into meatballs. Then pour 1 teaspoon of olive oil into pan. Heat to medium and place meatballs in the pan. Brown on both sides. Then pour 1/2 cup of chicken broth in pan and turn to low until meatballs are cooked through.
Heat zoodles in oven. Bake at 350 for 15 min, drain water and place zoodles in bowl. Serve meatballs over zoodles for a delicious supper! The kids ate theirs with mac and cheese and apple slices! They aren’t convinced of my a life with zoodles! But they loved the meatballs, didn’t complain about the veggies, and asked for more. It was a win!! Oh and hubby approved which is always a promise for this to be put into the rotation at our house! I am doubling the recipe next time so we can have leftovers the next day! Remember to do this and it helps keep healthy meals on hand at all times!!
